Guess what: you can do the Atkins diet and be a vegetarian. Then all problems are solved. Adequate protein, no refined junk carbs (flour/pasta/rice, no sugars of any kind), plenty of "good" monounsaturated fats, lots of vegetables, and a slim strong healthy singer.
There's a newsgroup somewhere, I think it's alt.support.diet.low-carb filled with people who have lost and maintained for years and eat a normal, healthy diet (except that most of them eat a lot of meat). There's also a study done by Duke University about how cutting out grains and sugars reduces cholesterol and increases energy levels.
