I don't know whether this will help or not, but you might start by looking at "Songs of Christmas--47 favourite songs for voice and piano" published by Boosey & Hawkes. It includes lot of European carols, but also some rather unusual selections:
De tierra lejana venimos is identified as Puerto Rican Earth's Joy is a Mexican folk tune with words by Sir Malcolm Sargent (how's that for multicultural?) El nombre del Cielo is identified as a "traditional Mexican carol" Huachitorito--a Latin American song for Christmas Eve Huron Indian Carol (charming retelling of the Christmas story) Jesu is Crying (Brazilian) Lullaby for Baby Jesus (Brazilian) Mary had a Baby (West Indian spiritual) Rocky, Rocky Road (West Indian spiritual) The Virgin Mary had a Baby Boy (Trinidad)

PS--I was in Hawaii just before Christmas a few years back and it was very odd to hear traditional Christmas carols (albeit Hawaiian arrangements) there, too!
