Here are a few suggestions:

Handel:

Arias frm Messiah

Bach:

Arias from Christmas Oratorio (Great, and underdone!)

Saine-Saens

"Expectans" ("Patiently") from Christmas Oratorio

Niles:

Several songs: I wonder as I wander; Jesus, Jesus rest your head,
What
songs were sung (A real gem, IMHO!)

Cornelius:

Weihnachtslieder (Christmas songs)

Brahms:

"Viola Songs" both would work!

Yon:

Gesu Bambino

Quilter:

An Old Carol (just lovely!)

Rorem:

A Christmas Carol (interesting, with unaccompanied sections)

Dello Joio

A Christmas Carol (A personal favorite!)

Check out the Hal Leonard "Christmas Carols for Solo Singers" and
Oxford's "Sing solo Christmas"

There are many, many more!
