First, let me say this is a great idea! I am awed by your desire to do something to help the world! It will be a lot of work to put together this benefit concert, but I predict that you will get a feeling from it that can't be replaced or described.
An eclectic show is best, but it might be nice to try to bind it around a theme. (Jocelyn's suggestion of love songs suggests a viable theme; I'm sure there are other approaches as well.) The multicultural idea is also a good one to pursue, and childrens' choirs can be very effective in these settings. One advantage you will probably have in lining up performers is that every one of us in the arts community has been affected by the epidemic (talk about a slight silver lining) and most are willing to do something for free if they think it will help. You might try to hook up with local agencies that do AIDS work and see what kind of mechanisms they already have set up for fundraising; you might be able to team up. Auctions seem to be popular fundraiser formats these days, so you could look into that as well.
