Some possibilities (many of which you can find more about on the Internet
- just do a Google search on "kids" or "children" and "arts and crafts"):

Theme: Asia
Crafts:
Origami
Chinese lanterns
Chinese New Year dragons,
Miniature Japanese gardens,
Oriental fans
Batik paintings

Theme: The Middle Ages
Crafts:
Design your own coat of arms banners (paper, pencils and crayons for
design; felt, glue, and wooden dowels for banners)
Decorated tapers or votive candles (ribbons, glue-on gemstones, paint for
plastic models, glue)
Pomander ornaments (styrofoam balls, ribbons, straight pins, beads)
Drawstring coin pouches (Circles of felt or leatherette, heavy cord or
leather bootlaces, scissors - no sewing required)
Illuminated manuscripts (photocopied texts in Olde English type, with
enough room for an illuminated letter at the beginning of the text that
the kids can create with coloured felt-tip pens and/or paints)
Decorated crowns (scissors, posterboard - metallic or covered with foil -
permanent coloured markers, "jewel" stickers, glue-on plastic
gemstones/gem-like buttons)
Ladies' cone-shaped hats with chiffon veils (posterboard, remnants of
fabric, remnants of chiffon)
Brass rubbings (see kits:

kids can share 1 kit between them)
Stained glass windows (construction paper, tissue paper, glue)

Theme: American Indian
Crafts:
Dream Catchers
Dance fans
Medicine pouches
headdresses

Theme: Any
Craft:
Collage - Bring lots of old magazines, and let the kids find pictures that
illustrate the theme - for example, if you did "music from around the
world", they could find and cut out pictures of people and places from
around the world, then make collages from those pictures
