Jameson,
Maybe a nice thing to add w.r.t. the Ravel cycle is the fact that the music was originally intended for a film about Don Quichotte by G.W. Pabst featuring the Russian bass Feodor Chaliapin. Four composers (Ibert, Milhaud, Delannoy and Ravel) were commissioned independently. Eventually the Ibert cycle was chosen but the film was never finished.
The Ibert cycle "Chansons de Don Quichotte" is also very beautiful. Although it was also not written for organ, you could consider to add one of the Ibert songs to your program.
Good luck !
