A favorite cycle of mine is John Harbison's "Mirabai Songs". Wonderful ecstatic & mystical text. It's fairly difficult for both the soprano and the pianist with complicated rhythms and melodies interchanged. But completely worth the work to perform.
There's also a set of pieces by Lee Hoiby called "Songs for Leontyne" which includes a really fun song entitled "The Snake" which is quite humourous. It's about a snake who loves to sing, but the birds can't stand it and try and get him to try other instruments....just adorable!
Just my $0.02 worth.

Really beautiful, melodic pieces preferred--I am trying to make this a very accessible progam, but I am willing to consider any style, period or composer. >>
