Oh, I remember that from the Presbyterian church I was singing in decades ago. I remember we sang an SATB setting of it. I didn't have a clue to its origin and thought it a bit sticky and sentimental. The melody is not what we think of as typically Scottish; it's rather Victorian hymmlike. But having seen sheep in lovely Scottish countrysides since, I would definitly look at it again.

<<The following is a song that Scottish kids have been learning at their mammies' knees since Roberton composed it earlier in the 20th century. Roberton was one of Scotland's leading lights in vocal (esp. choral) music. I think the song is very evocative of a Scottish country scene, and would fit the bill perfectly for your needs.
Sir Hugh Roberton: All on the Little Lambs
<...> All in the April ev'ning, April airs were abroad; I saw the sheep with their lambs And thought on the Lamb of God.
(the text is by Katharine Tynan)
There is also a book, published by Stainer and Bell, called MUSIC OF SCOTLAND 1500-1700 (ed. Kenneth Elliott), that includes sacred vocal music. >>
