Dear Jameson,
My personal faves are

Gia il sole dal Gange, Alma del core, and O del mio dolce ardor
The first two are very flashy, there are a lot of neat ornaments that you
can do. They are not extremely difficult and it is easy enough to get into
the piece in terms of expression. (Don't get me wrong, some of them aren't
extremely easy either). I am learning O del mio...and I just love it
because it is so passionate. And if you are going to do that piece, please
don't make the mistake of doing it too slow like so many singers.
