For how long have you quit each time? This is probably just your body "cleaning house." Smoking dries out your sinuses etc, which makes you more susceptible to colds to begin with. Once you've quit, I think your body has to work it all out of your system. It's not so much that the smoking is 'helping' (I know you don't think this) but your system has learned to sing through the smoking, you have to allow it to get used to not smoking. I know several people that got more goopy right after quitting. Drink lots & lots of fluids, and (I've heard) Vitamin C. Be patient, you'll get through it.
I myself noticed a big difference within 2 weeks of quitting. I didn't say anything to my castmates, because I thought it was wishful thinking & all in my head---but they noticed and commented on the improvement.
