As far as service music goes, I have often used some of Vaughan Williams'
"Seven Songs from Pilgrim's Progress." The setting of Psalm 23 ("The Bird's
Song") is stunning and very appropriate for worship, IMHO. "Watchful's Song"
which includes the text "Into thy hand O Lord, I commend my spirit" is also
very nice and has long unaccompanied sections.

They are published as singles, as well as complete in the Oxford VW songs
colelction. (I forget which volume.)

I have many more suggestions if you want!
